Inspector's notes

Observed the sanitizer levels in the 3-compartment sink at <10ppm quat concentration. Employee was actively washing dishes at the time. PIC replaced the container of quat sanitizer as it appeared to be low. Levels were still low after replacing the container. PIC will manually pour sanitizer in the basin and sanitizer buckets for now. The dishes and equipment were re-sanitized. Quat sanitizer levels must be between 150-400ppm. Corrective Action: Corrected at time of inspection.

Observed container of popcorn chicken salad at 56F. PIC said they were made an hour prior. The salads were moved to the walk-in refrigerator to cool down.
