***Second Consecutive Violation*** At time of inspection, slicer with accumulation of food debris on food and nonfood contact surfaces. Per employee, slicer began to be used >4 hours with unknown time of when taken apart and washed rinsed and sanitized. Instructed employees to wash rinse and sanitize slicers. Recommended slicer cleaning logs to better monitor 4-hour cleaning of slicers. All food-contact surfaces that contact TCS foods are to be cleaned every 4 hours by washing, rinsing, and sanitizing. Inspector's notes

***Second Consecutive Violation*** On floor shelf, gruyere cheese and a parmesan/ cheddar mix cheese with internal temperatures of 60*F-65*F. Per employee, cheeses were placed out for sale within normal time parameters. Employee moved gruyere and parmesan/cheddar cheese to cold holding cooler to rapidly cool back down to the proper temperature. Employee stated cheese company has stated two cheeses are shelf stable. Recommended submitting any cheeses wanting to maintain at room temperature for lab tests to show they are non-TCS foods, then submit results to Maricopa County to maintain on file. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

At deli counter hot foods case, employee taking temperatures of TCS foods with a probe thermometer without a proper cleaning before and after use. (A) EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be cleaned: (4) Before using or storing a FOOD TEMPERATURE MEASURING DEVICE.
