Observed an open package of sliced deli turkey and housemade tuna salad in the cook-line prep cooler without date marks. Also observed a container of brown gravy in the walk-in cooler, without a date mark. Cook dated the gravy and PIC discarded the turkey and tuna salad, see embargo form. Discussed date marking and routinely monitoring TCS foods. Date marking requirements apply to containers of processed TCS food that have been opened and to food prepared by a food establishment, in both cases if held for more than 24 hours, and while the food is under the control of the food establishment. Inside the unit was prepared taco beef salads at 53-59*F; milk at 48*F; cottage cheese at 46*F; sour cream at 48*F; chocolate cream pie at 53*F. Per temperature log at 10am the unit was at 38*F. Time of inspection is after 12pm.
