Inspector's notes

Observed facility had a high temp dishwasher, and used the temp dots on the dishes, and failed to get to the target 160F. Facility set up the 3 compartment sink at at 200 ppm quat in the meant time. Ensure that all high temp dishwashers are set at 160F or higher for each load of dishes. Corrective Action: Corrected at time of inspection.
