Inspector's notes

Observed small containers of coleslaw in a small undercounter refrigerator with internal temperatures as measured using a probe thermometer ranging from 55°F - 59°f. According to the person in charge, the coleslaw had been prepared early this same morning and then placed into the reach-in refrigerator. The coleslaw had been in the unit for less than 4 hours. The coleslaw was returned to the walk-in cooler to rapidly chill down to 41°F. Other cups of coleslaw that had been prepared this morning and were still cold holding in the walk-in cooler had internal temperatures as measured using a probe thermometer of 41°F or below. Discussed with person in charge to use alternative refrigeration or to use time-as-control for coleslaw cups until the small refrigerator can be repaired or replaced. The establishment has sufficient cold holding capacity to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed heavy gouging and deep cracking into the substrate of the walk-in cooler floor. In its current condition it is not smooth, durable or easily cleanable. Discussed with person in charge to repair the walk-in cooler floor. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
