Inspector's notes

Observed a pizza cutter stored as clean at the clean dishes storage area. Upon closer observation of the pizza cutter, food residue was observed on the pizza cutter. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cold brew nitro coffee at a coffee dispenser that was coming out at 45°F as measured using a probe thermometer. According to the person in charge, the coffee had been in the unit for less than 4 hours and was returned to the walk-in cooler to rapidly chill down to 41°F. Discussed with person in charge to have the coffee dispenser unit serviced. Person in charge will have the unit serviced. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed floor drain at the large, ice machine for bagged ice that has a large collection of organic matter in the floor drain. Discussed with person in charge to clean the floor drain. The PIC will have the floor drain cleaned. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
