Inspector's notes
Observed pre-packaged fruit packs containing cut melons, turkey sandwiches, turkey wraps, ham sandwiches, tuna sandwiches, chicken salad sandwich, egg salad sandwich, packaged boiled eggs, pre-made salads, and sub sandwiches in front cold holding case range in temperature between 45*F-56*F. Ambient air temperature of unit was 45*F. Observed yogurt parfaits, caramel flan cups, tapioca pudding, ham and turkey lunchables, hummus cups, mozzarella sticks, pepper jack sticks, and Colby jack sticks in left cold holding case range in temperature between 45*F-62*F. Ambient air temperature of unit was between 43.5*F and 50*F on varying shelves. Per person-in-charge (PIC), food items were placed in unit the day prior and this morning. PIC could not identify when both units went out of temperature. All TCS foods improperly cold held were discarded by PIC at time of inspection. PIC stated units will not be used to store TCS food items until repairs can be made. Establishment has sufficient cold holding capacities. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
