Observed wiping cloth in sanitizer bucket next to kitchen prep sink with 100 ppm quat sanitizer measured by test strips.. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Per manufacturer, quat concentration must be 200ppm - 400ppm. Corrective Action: Correct prior to next routine inspection.
