Observed pizza sauce from a can sitting on the prep table at ambient temperature. The PIC indicated that the sauce was using Time as a Public Health Control, however there were no documentation on when the sauce were to be discarded and the PIC stated the sauce was taken out 2.5 hours prior to inspection. If utilizing 4 hours and no temperature control, the food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control. Discussed with PIC about proper documentation for the pizza sauce if utilizing TPHC, and the PIC placed the discard time on a paper with other TPHC products.
