Inspector's notes

Observed cooked sausage cooling in deep bowl in walk-in cooler at 89 °F. Sausage had been cooked 1.5 hours prior as per person in charge. Time/temperature control for safety (TCS) foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Sausage was spread out onto shallow pans at time of inspection. Observed sausage at 60 °F after two hours of total cooling. Person in charge will ensure that sausage is cooled rapidly using approved methods. Corrective Action: Corrected at time of inspection.
