Inspector's notes

Observed no Certified Food Protection Manager (CFPM) on site at time of inspection. A CFPM is required to be on the premises during all hours of operation. Must obtain CFPM certification prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed container of cooked rice at 105 °F next to steam table. Rice had been prepared 1.5 hours prior to replace old container in steam table as per person in charge. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Rice was rapidly reheated to 165 °F and placed in steam table at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed container of imitation chorizo made from cooked beans in reach-in cooler in kitchen bearing a date mark from 7/30. Chorizo had been in coolers since date of preparation as per person in charge. Ready-to-eat, time/temperature control for safety (RTE/TCS) foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed wet wiping cloth stored in sanitizer bucket with 100 ppm quaternary ammonium (quat) sanitizer concentration at bar. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations (manufacturer instructions: 200-400 ppm quat). Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed missing steel panel from interior of cooler door in kitchen, exposing foam insulation. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
