Inspector's notes

Observed PIC actively wash, rinsing, and sanitizing dishes upon inspection. The quaternary ammonia sanitizer concentration tested >500ppm at time of inspection. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with concentration according to manufacturer's specifications (150-400ppm). Specifications on the Quat sanitizer include 17 gallons per one packet of water - reviewed during inspection.

PRIORITY VIOLATION-7-204.11 - Priority: Sanitizers, Criteria-Chemicals Predefined Comment: Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. The PIC partially drained the solution and added more water to get the mixture diluted within a range of 150-400ppm. Corrective Action: Corrected at time of inspection.
