Inspector's notes

At hot grab and go case, observed chicken tenders/119F and mini chicken nuggets/118F. (All other items were above 135F.) Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC was unable to produce written time as a control procedures. Immediately, PIC voluntarily pulled and discarded the chicken. Hot holding procedures were reviewed. Corrective Action: Corrected at time of inspection.
