-- Containers of sausage gravy and sausage patties had internal temperatures ranging from 77°F-85°F in the walk-in refrigerator. The person in charge (PIC) stated the items were removed from hot holding table and placed in walk-in to cool around 10:30 AM. Reviewed approved cooling methods with the PIC. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.

PIC stated that the employees would be trained on proper use of the hand washing sinks. Ensure that hand wash sinks are used for handwashing only.
