Employee working at the cash register went to the fryer two times to handle the fryer baskets and portion the cooked fries into single service containers without washing hands. Employee directly handled and touched cooked fries without first washing hands. The employee was asked to wash hands when changing tasks. Ensure that employees wash hands after engaging in activities that may contaminate hands. Corrective Action: Corrected at time of inspection.

Four pans of cut lettuce-46-50F cooling in walk in cooler. PIC stated that lettuce was prepped and placed into the cooler to cool six hours prior. PIC discarded lettuce-see embargo form. PHF/TCS foods prepared from ingredients at ambient temperature shall be cooled within 4 hours to 41°F or less. Corrective Action: Corrected at time of inspection.

Notified Person In Charge (PIC) PIC directed employee to wash hands appropriately. Also observed employee directly touch raw chicken tender with right gloved hand. Employee proceeded in directly touching deep fryer hands with contaminated right gloved hand. Employee touched same handle. Employee proceeded in working with cooked chicken bites. Notified Person In Charge (PIC). PIC directed both employee to take off contaminated gloves and hand wash. ======Employee not washing hands between working with raw food and RTE food.
