Advised PIC a splash guard must be placed between the sinks to prevent contamination from the premises unless more than 24 inches away from food, food prep areas, and wares. Add a splash guard to the sink prior to the next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed ham and cheese croissants for service to customer the PIC stated were provided by "Too Sweet Cakes" that did not bear an inspection seal. Observed the ham and cheese baked into the croissant which was not observed cut and filled as a sandwich. Discussed ensuring all foods served onsite are from an approved source. All food must be obtained from an approved source as defined by law. All food from unapproved source was placed on a true embargo at time of inspection. PIC was informed the croissants placed on a true embargo must not be removed, sold, discarded or repurposed until instructed by MCESD. Corrective Action: Correct prior to re-inspection.

At mop sink, inspector noted a shut off v-valve with one valve being installed to the chemical system was directly connected to the Atmospheric Continuous Pressure Backflow device that can cause possible cross connection between chemical and portable water line. Please disconnect the chemical system from this ACP backflow device to prevent possible cross connection. Coached Manager a various approved method to prevent the cross connection during inspection.
