No County legal action will result from this inspection.Observed two Electrolux thawing cabinets in the back kitchen near the walk in freezers. No thawing observed at the time of inspection and both units were observed off. Per PIC, the thawing cabinet is used with a setting that thaws foods starting at 65*F until the foods are fully thawed to 41*F or below. Advised PIC to immediately discontinue this practice and to thaw foods using only approved thawing methods. Provided thawing methods MCESD handout. Advised PIC to use the cooler at 41*F or below only, which may result in faster thawing than in the walk in cooler. Advised PIC that the equipment may need to be placed under review and a variance may be required if using an alternative thawing method.

Observed dish machine with <10ppm concentration. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Person in charge (PIC) will discontinue using the machine and will wash, rinse, and sanitize using the 3 compartment sink until the machine is repaired. Corrective Action: Corrected at time of inspection.
