Observed two trays of raw sliced watermelon and two plates of chopped lettuce & chicken salad with no date mark in the reach in refrigerator. After discussion with the person in charge it was determined all ready to eat (RTE) time/temperature controlled for safety (TCS) foods were prepared on Sunday (7/5). RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
