Observed mechanical low temperature chlorine dish machine at the bar sanitizing glassware and cutting boards at time of inspection. Chlorine concentration measured at 0 PPM. Dish machine was ran two more times, final rinse chlorine sanitizer concentration measured at 0 PPM each time. Acceptable final rinse chlorine sanitizer concentration shall measure between 50-100 PPM. PIC moved all bar food contact surfaces being washed to the kitchen to be washed and sanitized at time of inspection. Service call made at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed cooling methods with the person in charge. PIC reviewed using adequately sized ice wands to aid the cooling process with staff. Predefined Comment: All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Time as a Public Health Control requires time-stamping for items actively held under Time as a Public Health Control. No discard time observed. According to the PIC the cheese and fries were removed from temperature control at 2PM.
