Observed in-use warewashing machine in kitchen showing a chlorine concentration of 0ppm by both inspector and facility test strips. Further dishwashing cycles did not show a change in sanitizer levels. Chlorine sanitizer must be between 50-100 ppm in order to properly sanitize food contact surfaces. PIC called maintenance and will use the 3-compartment sink until the warewashing machine is repaired. Corrective Action: Corrected at time of inspection.

Inspector's notes

Sliced tomatoes and shredded cheese in the prep table showed a temperature of 51°F by probe thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, foods were just placed in the prep table within the hour. PIC moved the foods to the walk-in fridge to rapidly cool at time of inspection. Corrective Action: Corrected at time of inspection.
