PRIORITY VIOLATION-3-302.11 (A1-2) - Priority: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection from Cross Contamination. Predefined Comment: All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Blue liquid in faded disinfectant labeled spray bottle is degreaser that was filled in bottle per PIC. PIC properly labeled spray bottle. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies must be clearly and individually identified with the common name of the material. Corrective Action: Corrected at time of inspection.

Ambient temperature is 39*F. Discussed with Person in Charge(PIC) the TCS items were in the walk-in over night. TCS items are butter, pistachio butter, poppy seed chevre cheese, heavy cream, ricotta, cream cheese, goat cheese, raw egg, baby spinach and frisee lettuce. All TCS items were embargoed. TCS items that were delivered less than 4 hours prior to inspection were transferred to adequate refrigeration on site. Discussed with PIC all TCS items shall be at a temperature of 41*F or less.
