The person in charge stated the chicken sauce contained chicken broth, heat treated vegetables, was prepared last night, and left in the walk in cooler over night. TCS (time temperature control for safety) food items must be cooled from 135F to 70F in two hours then from 70F to 41F in four hours and maintained at 41F or below for cold holding.
