At rotisserie chicken area, employee went through swinging doors to sales floor, returned to prep area, donned gloves to handle ready to eat chickens, without a proper handwash. Instructed employee to remove gloves, wash hands, and don new gloves to continue with task. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

At in use slicers, employee using SaniSave No Rinse Cleaner Sanitizer Solution for 4-hour cleaning with a concentration of 0ppm. After bent line was repaired on dispenser, bottle was refilled with sanitizer solution with concentration of 150-200ppm. Recommended review of SaniSave procedures due to inconsistency of employee knowledge. Discussed more frequent monitoring of sanitizer solution, especially when re-filling sanitizer bottles. Corrective Action: Corrected at time of inspection.

RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.
