Inspector's notes

In outdoor two door glass front drink cooler, package of raw bratwursts with internal temperature of 71*F. Per employees, unknown time of when bratwursts were placed in cooler. Package of raw bratwursts were discarded. See embargo form. On cook line, in prep table cooler closest to warewashing machine, TCS foods (pico salsa, cut leafy greens, cut tomatoes, assorted cheeses) with internal temperatures of 46*F-49*F. Per employees, TCS food temperatures were checked within normal time parameters. Ice was added to TCS foods in prep table cooler to rapidly cool back down to the proper temperature. Ambient temperature of prep table cooler was 41*F and 40.7*F, taken with inspector min/max probe thermometer. Manager called repair company to ensure prep table cooler is working properly. Until checked, use ice baths and remove all food at end of night. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times.
