In reach-in refrigerator, observed cooked beef/53F and shrimp/43-49F prepared 3 to 4 days prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Below these foods were four pans of just-cooked shrimp and chicken that were cooling. It was determined that the temperature rose due to hot the hot foods cooling directly beneath. Reviewed proper storage procedures. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. On the line, also observed garlic-in-oil/74F being maintained at room temperature. Per PIC, this mixture was within safe time parameters and was returned to the refrigerator to cool and properly cold hold. Corrective Action: Corrected at time of inspection.
