According to person in charge, ham had been prepped less than 2 hours prior and placed directly in unit. Coffee mix was also prepped less than one hour prior and placed directly in small refrigerator. All items left out for prep must be moved back to the walk-in to cool to 41*F and below before being placed in reach-ins or small refrigeration units. Discussed warm items can overload small units and cause them to be out of temperature and put stress on the unit. All items were moved to the walk-in at time of inspection.
