An IR thermometer was reading air temperature from the fans at 33°F and an ambient thermomter had an air temperature reading of 36°F.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cheese sticks and a half gallon of milk with internal temperatures as measured using a probe thermometer ranging from 45°F - 49°F inside of the walk-in cooler. An ambient air thermometer was placed into the walk-in and allowed to stabilize for 15 minutes. The air temperature in the unit was steady at 46°F. An ir thermometer laser was used to assess air temperature from the fans in the unit and the air temperature ranged from 43°F - 46°F. According to the person in charge, the TCS foods in the unit had been in the unit for more than 4 hours and were embargoed at time of inspection (see embargo form). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Please refer to violation #22. Walk-in cooler not holding at 41°F or below. A 24-hour reinspection will occur for the walk-in unit. Discussed with person in charge to pause shipments of TCS foods until the unit is serviced. The person in charge has a technician coming day of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A re-inspection will occur within 24 hours. Corrective Action: Correct prior to re-inspection.
