Observed employee wash and rinse cups used for mixing coffee beverages containing milk before being re-used to prepare more drinks without sanitizing in between. Per employee, cups had been in use since opening, more than 4 hours prior. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Food-contact surfaces must be properly sanitized after washing and rinsing. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the following time/temperature controlled for safety foods with internal temperatures of 45*F in the front refrigerated unit next to ice chest: milk, half and half, whipped cream, and steeped cold brew. Ambient air temperature of unit was at a minimum of 45.5*F, via minimum/maximum probe thermometer. Per PIC, unit is turned off to defrost and melt accumulating ice in back of unit and turned on again a few hours later. Per PIC, unit was turned off at 8:30AM. Instructed PIC to turn on unit. Observed unit functioning and TCS foods cooled to 41*F by end of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Discussed with PIC repairing/replacing unit or keeping unit turned on at all times to ensure TCS foods are kept at 41*F or below. Corrective Action: Corrected at time of inspection. REPEAT VIOLATION (2ND CONSECUTIVE VIOLATION).

Observed the following time/temperature controlled for safety foods with internal temperatures of 45*F in the refrigerated display case: pumpkin cheesecake and pumpkin pie. Person in charge indicated they were removed from the freezer 11/25 and had been in the display case since 11/25. All other time/temperature controlled for safety (TCS) foods in the unit had internal temperatures of 41*F and below and the unit had a measured ambient temperature of 37.5*F using a min/max thermometer. Discussed proper thawing methods and to ensure that TCS foods do not exceed 41*F.
