Arrived at establishment. Establishment was closed and a sign on the door indicated they had an electrical fire 12/27. The operator was contacted over the phone and a message was left. An email was sent to the operator as well discussing need for remodel permit prior to reopening due to the extent of the damage.

Soiled wiping cloths, especially when moist, can become breeding grounds for pathogens that could be transferred to food. Any wiping cloths that are not dry (except those used once and then laundered) must be stored in a sanitizer solution of adequate concentration between uses.
