Inspector's notes

Observed an in-use ice machine with excessive hard water water mineral accumulation behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Inspector's notes

Observed bags of lettuce inside walk-in unit next to reach through door with an internal temperature of 47-49*F. Internal temp of TCS food items registered with internal probe thermometer. Observed walk-in side door open every time the main walk-in door would close. Side door would not fully shut every time it was blown open and would allow warm air from cook line into walk-in. Ambient temp of walk-in registered 38*F with min/max ambient air thermometer. PIC stated the lettuce bags were in the walk-in since the day before and had not been taken out. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation. Corrected at time of inspection.

Observed TCS food in a walk-in unit with a warm ambient temperature. Ambient temperature of unit measured using min/max thermometer registered 43*F. Internal temperature of TCS food taken with internal probe thermometer registered 43-45*F. TCS food items included sliced cheeses, creamy sauces, sour cream, sliced tomatoes, sliced leafy greens, and fried fish. All TCS foods improperly cold held were discarded by PIC at time of inspection. Per PIC the unit has had issues over the last few weeks and has issues sealing due to side door causing the main door to open when it closes. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to 24hr re-inspection on 10/3/24.

Observed 0ppm of QUAT sanitizer at the three compartment sink that was actively sanitizing dishes. PIC emptied the sanitizer sink and refilled with new QUAT sanitizer from the dispenser. Inspector re-tested the water and QUAT sanitizer was at 200ppm concentration. Ensure the QUAT concentration is between 150ppm- 400ppm for active sanitizing of dishes.
