Observed excessive amount of small flies in back prep-area near the floor drains, grease trap, and hand washing sink. Educated PIC that the establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Correct prior to re-inspection on 2/3/25.

Observed TCS food items located inside display cooler with an internal temperature of 45-47*F. Internal temperature registered with an internal probe thermometer. TCS food items included cream cheeses, cut deli meats, cooled potatoes, and cut cheeses. Per PIC all food items were prepared less than 2hrs at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation. Corrected at time of inspection.

Observed TCS food items being held in pre-cooler with a warm ambient temperature. Ambient temperature measured with min/max thermometer registered 52*F. TCS food items internal temperature measured with internal probe thermometer registered 51*F. TCS food items included cut tomatoes, cut leafy greens, and cream cheese. Observed whole shelled eggs sitting next to cooking surface, per PIC eggs had been by the side for several hours. Internal temperature of eggs taken with internal probe thermometer registered 81*F. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
