Inspector's notes

Observed mashed potatoes (125'F) in hot-holding unit located by bar housing time controlled food items. PIC stated food item was prepared about an hour prior and have been placed in hot-holding unit to be held hot at 135'F and above. Ambient temperature of water in hot-holding unit measured at 141'F. PIC reheated mashed potatoes to 165'F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed large amounts of standing water in warewashing area and food prep area. Standing water in warewashing area is due to splash from dishwashing activities and standing water in food prep area is due to leak from container housing warm water for cleaning purposes. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Suggested PIC to set proper cleaning intervals to prevent build up of water. Corrective Action: Correct prior to next routine inspection.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage - Handless cup being used as a scoop stored in the breading. PIC removed the cup. Scoops being stored in 90*F water near steam tables in a dipper well. The dipper well was not on. PIC turned it on but it caused a drain to overflow. PIC turned off the dipper well and moved the utensils to be stored in a steam well with water over 135*F. Correct By: Correct Prior To Next Routine Inspection
