Observed 5 containers of penne pasta ranging from 54*F to 56*F cooling in the walk-in covered with tightly wrapped plastic wrap. Penne pasta was placed in the walk-in to cool minutes prior to inspection and person in charge removed the plastic wrap at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed multiple containers of penne pasta with plastic wrap tightly wrapped on top with temperatures between 48 to 50*F at time of inspection. Per person in charge (PIC), all items were made less than 3 hours prior to inspection. Observed cooked peppers and ribs in prep table on the cook line with temperatures between 46 to 60*F at time of inspection. Per PIC and date mark, cooked peppers and ribs were made less than 4 hours prior to inspection. Pasta cooling was uncovered to allow for rapid cooling. Reviewed with PIC about not cooling in prep tables. Prep tables are not made to cool items down; only to maintain temperature. PIC moved items to walk-in to rapid cool at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Inspector's notes

Observed cubed silicon ice mold stored directly in ice well containing ice utilized for customer drinks at time of inspection. Discussed that ice used as an exterior cooling may not be used as an ingredient as the ice has become contaminated. Bartender removed the container and disposed of the ice at the time of inspection. Discussed storing containers in a pan with ice separate from the ice they scoop for customer drinks so that they pose no risk of contaminating customer food at time of inspection. Corrective Action: Corrected at time of inspection.

Observed several metal and plastic pans stored as clean in the prep area and on the clean dish rack, with food debris on the food-contact surfaces. The pans stored as clean also observed to be stacked while wet. PIC removed the soiled pans and placed into the dish area. PIC will instruct employees to check the equipment after being washed and prior to storing as clean. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.
