2ND CONSECUTIVE VIOLATION Observed whole milk and skim milk cold holding in the refrigerated creamer dispenser with internal temperatures of 45-47F, probe thermometer, verified by person in charge (PIC). According to PIC, the creamer was placed into the unit an hour prior to the inspection, the milk will be rapidly cooled to 41F or less in the walk-in cooler. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Reviewed the establishment's cold holding and verification procedure. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.

Observed cold brew in a deep, covered plastic container in a reach-in cooler in the prep area with an internal temperature of 59F, probe thermometer, verified by PIC. According to PIC, room temperature water was added to the cold brew extract, which is made by steeping the grounds in water while stored in the walk-in cooler overnight, an hour before the inspection. Discussed adding ice cold water to the extract in and cooling in the walk-in to ensure that the cold brew is placed into the reach-in cooler at 41F or less. PIC placed the cold brew into the walk-in and will retrain employees to use ice water and the walk-in to rapidly cool the cold brew. Corrective Action: Corrected at time of inspection.

Observed ready-to-eat foods such as chicken wraps, stuffed croissants, turkey sausage, cream cheese, ham sliders bagel bites, precooked sausage and eggs, and omelet bites cold holding in the sandwich prep cooler with internal temperatures of 46-49F, probe thermometer, verified by person in charge (PIC). According to PIC, the prep cooler was stocked the evening prior, or early morning of the inspection, at least 4 hours prior to inspection. PIC voluntarily discarded the TCS food items, see embargo form. PIC placed the cream cheese (recently stocked) into the walk-in cooler to rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. See violation #33. Corrective Action: Corrected at time of inspection.
