Observed cooked beef and cooked chicken in prep cooler at south end of line at 44-51 °F. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. TCS foods had been placed in cooler between 3 hours and one day prior as per person in charge. TCS foods exceeding 4 hours of improper cold holding were discarded at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked dumplings and chicken-and-vegetable mixture at 45-50 °F in tabletop cooler. Person in charge stated that foods had been in cooler for about 5 hours. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by person in charge at time of inspection. Replacement containers contained shallower foods and were covered with lids. Replacement foods later observed at 41 °F or lower as measured with probe thermometer. Corrective Action: Corrected at time of inspection.
