Observed establishment manually washing food-contact surfaces in three-compartment sink. Sanitizing solution in sanitizer bay contained 0 ppm active quat as measured with establishment's quat test strips. Sanitizer used by establishment must be at a concentration of 150-400 ppm for sanitization of food-contact surfaces according to the label. Person in charge added sanitizer manually to produce sanitizing solution with 300 ppm active quat. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services.
