Observed tubs of menudo meat submerged in water stored on floor under prep table in kitchen area. Menudo meat was partially frozen with internal temperature of 32*F. Ensure to use proper thawing methods such as: Completely submerged under running water. o Water must be 70*F or cooler. o Water must have sufficient velocity to float off loose particles Or o Under refrigeration at 41*F o And as part of the cooking process. Operator place menudo in walk-in refrigeration unit at time of inspection. Corrective Action: Corrected at time of inspection.
