Discussed with employee hands shall be adequately wash hands upon changing gloves. Employee proceeded to use 3-compartment sink for hand washing instead of hand sink and did not wash hands for minimum 20seconds. Discussed to use designated hand sink and wash with soap and warm water (100*F) minimum 20 seconds. Reference violation #10 for interim hand washing sink. Informed employee to properly wash hands minimum 20 seconds at interim hand sink and when changing tasks. Corrective Action: Correct prior to re-inspection.

Observed plumbing backup issues at floor sink directly plumbed to primary hand sink in rear kitchen area. Discussed, hand sink shall be fully functional with adequate plumbing and discharge of waste water and fully stocked with soap and paper towels. Discussed in interim to use prep-sink as hand sink until necessary plumbing repairs are made to hand sink in rear kitchen area. Operator proceeded to stock prep-sink with soap and paper towels. A re-inspection will be conducted by 4/2/26 to verify hand sink backup issues are permanently repaired. Corrective Action: Correct prior to re-inspection.
