#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

In the walk-in cooler all TCS foods such as dairy products, cooked proteins, cooked food, cut leafy green, cut tomatoes, and other food had internal temperatures of 46*F. The PIC verified the temperatures using the establishment's thermometer. The PIC stated the food temperature were recorded at 38*F earlier today. The PIC stated the recently had a delivery and had the door open. During inspection it was noticed that the walk-in cooler window does not close/latch properly and was observed opened during inspection. The PIC opened the walk-in freezer door at the time of inspection to allow the walk-in cooler to cool down. The food items were at 42*F-44*F at the end of the inspection and the ambient temperature was 41*F.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
