Inspector's notes

Reach-in cooler, nearest the grill, observed with internal temperature of 50-56*F. TCS food items inside had internal temperatures of 45-49*F. Temperature verified with PIC's and inspector's calibrated probe thermometers. PIC stated the cooler and food items were last checked around 5 or 6 AM this morning. PIC discarded the TCS food items (see embargo form). Alternate coolers are available to continue normal operations. The cooler in question will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below.
