Observed multiple baking sheets with heavy black organic buildup on the outer edges. Alerted the manager and discussed the frequency of routine deep cleaning for their baking sheets. All equipment to be kept clean and in good condition. Organic buildup can attract pests and break off into food. Corrective Action: Correct prior to next routine inspection.

I alerted the manager, who plans to reach out to the hood servicer, expedite the service, and ensure the shoot above the ovens is cleaned with each service. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Observed garlic knots (68°F) out at room temperature. The oil and fresh chopped garlic was pooled in the bottom of the container creating an anaerobic environment. Discussed risks of garlic-in-oil stored at room temperature. Manager stated they will place the garlic knots on Time Control along with their pizza-by-the-Slice. Garlic knots were placed on time control, at time of inspection. Discussed Time Control policies and procedures and provided additional guidance on Time/Temperature Control (TCS) for Safety Foods.
