For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.---Observed cooked corn, pico de gallo (cut tomatoes), and cheese having internal temperatures of 46-52*F in the prep cooler. Person in charge states these food items were placed in the unit less than 1 hour prior to inspection but were moved to a working cooler at the time of inspection. Prep cooler had an ambient temperature of 48*F but establishment has other working coolers and is not vital to the operation of the establishment. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
