Observed heads of lettuce stored directly in white trash bags in the bottom of the reach in cooler in the back right of the establishment. Informed PIC that food cannot be stores in trash bags and must be stored in food grade bags or containers. Instructed PIC to remove the heads of lettuce from the bags and place them in food grade bags or container instead. PIC removed the heads of lettuce and placed that in food grade containers at time of inspection. Establishment currently only obtains trash bags onsite for food. Discussed with PIC that trash bags can never be used for food. Reviewed examples of food grade bags with PIC online. Use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. Corrective Action: Corrected at time of inspection.

Discussed with person in charge to place boba under time as a control as opposed to temperature as a control.
