Establishment has quaternary ammonium sanitizer on-site but PIC was only able to produce chlorine test strips at time of inspection. PIC stated that all of their food comes from a caterer in individually packaged containers. Any and all utensils or containers that are provided by the catering service are returned to the caterer to be washed, rinsed, and sanitized according to FDA food code regulations. Ensure that establishment acquires quaternary ammonium test strips prior to next routine inspection. 2. Discussed logs posted on all refrigeration units. Ensure logs are accurately filled out daily. Proper record keeping may assist with timely service requests for coolers.
Inspector's notes
Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge (PIC) was unable to produce a valid certified food protection manager certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Provide a CFPM onsite by next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed the caulking around the designated hand sink to be missing, cracked or otherwise in disrepair rendering the areas not smooth, nor easily cleanable. Re-seal so that areas are smooth, easily cleanable, and prevent the seepage of liquid. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
