Of note: discussed food storage containers. All food storage containers must be unmistakably food-grade. Establishment is currently permitted as a Class 2 Eating & Drinking permit and washes and preps numerous fruits and vegetables for various menu items, such as strawberries and cream and chilindrina (a snack food with commercially precooked pork rinds, cabbage, cucumber, jalapeno peppers, and cilantro). Establishment has a food prep sink and not require installation of additional equipment to accommodate menu processes. Establishment will be change to a Class 3 Eating & Drinking permit 10+ seating.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed bags of cotija cheese and a container of chopped cabbage with internal temperatures of 49-52 degrees Fahrenheit in a prep-style refrigerator that was not holding cold during the inspection. Also observed a 1/6 size pan of cotija cheese stored at ambient temperature for service with an internal temperature of 62F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), bagged cheeses and cabbage were placed into unit during the previous business day or earlier, more than 4 hours prior to the inspection. The open container of cheese was prepped less than 4 hours prior the inspection, per PIC, and was placed on ice to cool rapidly - inspector verified temperature. The bagged cheeses and cabbage were voluntarily discarded by the PIC - see embargo form. Corrective Action: Corrected at time of inspection.
