#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various cheese sticks, whole milk, and 2% milk with internal temperatures between 45*F-54*F in refrigerated display case directly next to shelving for retail water gallons. The person in charge (PIC) indicated they did not check internal temperatures of food items or the ambient air temperature of the case today, but a manager had utilized an infrared thermometer. PIC indicated the whole gallons of milk were placed in unit at approximately 7:30AM, while the cheese sticks and 2% milk had been in unit for more than 4 hours. The measured ambient temperature of the case was 34*F-41*F, via min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Whole milk was relocated to functioning walk-in refrigerator at time of inspection and all other TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed with PIC having unit adjusted to have less frequent or shorter defrost cycles to ensure internal food temperatures do not increase too much. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed reduced pressure zone (RPZ) assembly backflow device connected to coffee machine located under cabinet placed in empty food container without a proper wall mount. RPZ was observed to be laying flat in container with no proper drainage accessible. PIC states coffee machine is cleaned externally by removing attachments and properly sanitizing at three-compartment sink. PIC states no chemicals are flushed through the machine. A backflow prevention device shall be located so that it may be serviced and maintained. All plumbing must be maintained in good repair at all times. Must ensure RPZ backflow device is mounted horizontally to function and have drain for relief port routed to floor sink prior to next routine inspection. Person in charge indicated they had been in case for more than 4 hours. The measured ambient temperature of the case 42.8*F using a min/max thermometer.
