Half & half, cut lettuce, caramelized onions over ice at expo and on the cook line, under temperature control per manager, at 44*F to 50*F internally. TCS items had been out less than an hour. Manager discarded some of them and returned the remaining to the walk-in to re-cool. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Reviewed temperature and time control with the managers. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
