Corrective Action: Corrected at time of inspection. In the two door reach-in cooler, milk, liquid eggs, cheeses, salsas, real butter, oat milk, yogurt, cream cheese, sausages, ham and meat/cheese sandwiches at 48*F to 53*F internally for unknown time. Embargoed TCS items. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

No detectable chlorine in in-use automatic low temperature dishwasher. Determined dispenser bottle was empty and PIC replaced the bottle and was able to have to machine dispense at the proper 50-100 ppm concentration. PIC rewashed the recently washed equipment. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness.
