Observed inside main walk in unit with two large tubs of cooked pork ribs. Internal temperatures was 84*F-94*F with inspector and establishment thermometers. Calibrated thermometers with Person In Charge (PIC). Stickers on tubs was at 1:36pm-1:52pm. Time of inspection is after 4:15pm. PIC will have employees discard improperly cooling pork ribs.

After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and a verification breakdown which resulted in the violation.
