Observed 0 PPM of chlorine sanitizer in 3 compartment sink actively being used. PIC, drained and re-filled sanitizer to 50 PPM at time of inspection. Instructed employee to re-sanitize dishes. Please test regularly using test strips to ensure proper levels are maintained at all times.

PIC stated salsa had been made 1 hour prior to inspection, made from canned ingredients and was in the process of cooling. Large batch of salsa was cooling in deep plastic container in upright reach-in cooler with same internal temperature. Also observed green salsa cooling in deep plastic container in upright reach-in cooler with an internal temperature of 65*f.

Observed salsa verde in portioned cups with an internal temperature of 66*F. According to PIC, salsa had been portioned and had previously been in upright reach-in cooler since previous day. Cooler was holding ambient air temperature of 41*F, including all TCS food products. Salsa containers were discarded at time of inspection.
